Many thanks to all those who explained the mystery of easy-cook rice last night; cooking it up "in the pot" with some carrots, fried shallots, chicken and mushrooms is really quite nice.

(Yesterday's concoction was sweet & sour chicken & peppers, stir-fry veg with egg, and the aforementioned rice. Tomorrow is likely to be a spanish omlette)

Can anyone tell me what the hell the purpose of "easy cook" rice actually is?

Today was something of a non-starter; got a moderate amount done but it really didn't feel like it. Tubes were screwed to and from work (although the Circle line appears to count as "normal service" with 15 minute gaps), so I got home not far shy of 8, although I did then manage to cook a fairly enjoyable dinner.

Now I just want to curl up on the sofa and doze until bed.

Quinoa is actually *really nice*. As was the huge heap of roast veggies and good saussies I just ate with it :)

Still cooked far too much veggies though :)

(yes, I'm on a health kick, and also a "stop spending so much money on packaged food" kick)

This meal has a number of attractive points for me - one being that it's delicious, two being that it's very healthy (with the possible exception of the sausages, which could probably be removed for a very pleasant vegetarian meal), and three that it can pretty much all being prepared on a chopping board by waving a sharp knife around, then slung in the oven giving me time to get the majority of the washing up done (or in this case, call my gran) while it cooks. Quinoa is astoundingly easy to prepare, too - even more so than white rice.

Need skin-on salmon for pan-grilling though or it falls apart

I am, often to the amusement of those who think I'll die of starvation when left to fend for myself for more than 24 hours, a very lazy cook (and overly fond of run-on sentences).

However, sitting here with a plate of glazed herb-and-apple pork chops, potatoes and peas, I think I'll somehow live.

Plus I sat down precisely as Red Dwarf started ;)

I appear to have managed to produce a rather delicious plateful of lamb, baked vegetables and couscous, all without the use of a safety net ;p

(ETA: although, as always happens 'round here, I appear to have made twice as much as needed...)
