Roast lamb extremely successful - a definite boost to kitchen confidence...
Congrats, lamb is easy to screw up. It's one of the reasons I don't cook it but once in a blue moon.
Buffalo is similarly sensitive. I practically have to micromanage it when I've got it on the grill. I grill buffalo at every opportunity, though, since the stores I go to only have it periodically, and those are the times you see me having the red meat 3 times a week. Buffalo is surprisingly lean and low cholesterol.
